What information do you guys track in fishing logs and what trends are your looking for?

Time of day, species, weight, water depth, depth of lure, type & color of lure, type of presentation ( DR Dipsey, lead core etc), location, and boat speed. Trends will become pretty evident as the season goes on--last year I discovered that my 2 wire dipseys were taking close to half my fish. This year I have 4 wire dipseys!!!

Weather conditions, presents of any current and where in the water column the current is, speed, available light including sunlight and amount of ripple of the water for diffusing that light as well as sediment in the water. I am looking for what lures work when and where, odd temps that I catch fish in, and any other general pattern. they emerge pretty quickly. Memory isnt all that its cracked up to be. Another thing that emerges is that certain lures work seasonally as well as in certain conditions. More on that to come as the season wears on.
