You really like the batter mixes Coz??? Man...if I had my drothers, it would be a corn-meal based dry mix over the batter anyday!!

There is very little wiggle room when cooking fish with the batters...and it tends to hold the oil. Yeah..you get that "crunch" on the outside, but there always seems to be a soggy layer on top of the fish.

The place we used to go to up in Ontario made their own mix out of Old Bay, Pepper, cracker crumbs, and corn meal. Soak fillets in buttermilk overnight, then discard and wipe dry. Mix egg and milk together in a bowl. Dust fillets with bread crumbs, then dredge in milk/egg mixture, then immediately toss into corn meal/Old Bay/pepper mix.

Yeah....it's good, and I've also added Cayenne pepper to the dry mix to give things a little kick...

May soumd like a dumb question but you cant get drakes mix there??

Bfg if you mix the drakes real thin, like water thin you eliminate the mushy part that is right againt the fish and it is not nearly as greasy. Don't follow the directions on the box. I usualyy add some seasoning and use a dark flat beer. You also dont overcook the fish this way to get the batter done. The only bad part is it makes a little more of a mess when going from the bowl to the fryer. but you get a thin light tasty batter. Guess what i am doing for dinner tonight.

Edit:
Dont get me wrong i like breading fish just as much.

I dont know how far you are fomr a Gordon foods store, but they carry it. As far as a batter goes it is all i will use. Just thin the mix till it is almost like water. Very thin not like the directions tell you. Dip the fish in and move real quickly to the fryer so it doesnt all drip off. I like to make a beer batter, just use your favorite beer after it goes flat. It also make the best onion rings fried veggies and fried pickles. They make a couple different ones now i just use the all purpose mix.

I use drakes thin also but with milk seasoned the way i like. But i crush corn flakes in a gallon baggy then put in a bowl. then dip fish in drakes then roll in corn flakes and deep fry nice and crispy.

I can get this stuff as I work in a kitchen. You should be able to go to any local restaurant and have them order it for you.
