Sesame-Orange Salmon PDF

A sweet, golden crust gives the salmon a beautiful luster as well as appealing flavor. Served over greens, as suggested below, this is a meal as well-suited for a dinner party as it is for a busy weeknight.

????????????????????????? 1/4 cup sesame seeds

1 tablespoon fresh orange zest

1/2 teaspoon salt

1 teaspoon sesame oil

1 tablespoon orange juice

1 teaspoon honey

1 1/2 pounds salmon fillets, cut in 4 equal pieces

Preheat the oven to 450 degrees. Coat a baking sheet with cooking spray.

2. In a dry skillet, toast the sesame seeds over medium high, shaking the pan or stirring the seeds frequently to toast them evenly. When they begin to darken somewhat, pour them onto a plate.

3. Combine the seeds with the orange zest and salt.

4. In a small bowl, whisk together the sesame oil, orange juice and honey. Brush the mixture on top of the fish. Sprinkle with the sesame seed mixture, taking care to spread it evenly.

5. Place the fish on the prepared baking sheet and cook in the middle of the oven for 12 minutes, or until golden on the outside and there is only a thin layer of translucency in the center. (The fish will lose all translucency by the time it is served.) Makes 4 servings.

Nutritional analysis

For each serving: 374 calories, 35 g protein, 4 g carbohydrates, 1 g fiber, 23 g fat (4 g saturated fat), 100 mg cholesterol, 394 mg sodium.

Serving suggestions

Wilt flat-leaf or baby spinach just until it is bright green. Toss with rice vinegar and soy sauce. Place a portion of spinach on each plate and serve the salmon on top.

Accompany with white rice tossed with scallions.
