Here's the super-simple brine recipe that I used on my last batch of smoked fish and it turned out awesome. Ingredients:
One 2lb bag of brown sugar
One cup of non-iodized salt

Directions:
Mix salt and sugar, then apply as either a dry brine or do what I did and dump the fish and salt/sugar mixture in a 5 gallon bucket and mix thoroughly. Cover and let sit overnight. Rinse fillets and smoke at 200 degrees for 3-4 hours.

It doesn't get any simpler than that, folks, and you will be very pleased with the results! Thanks to Mike from Screaming Minnow Charters for the tips.
