Sweet orange salmon PDF

Something quick and light to do with your fresh salmon.

Serves: 4 / Preparation time: 10 minutes / Total time: 20 minutes

Eight ingredients combine in a spice rub that would also be good on pork tenderloin medallions. Serve this with orange wedges and a tossed garden salad.

  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon grated orange rind
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon black pepper
  • 4 (6 ounces each) salmon fillets

Nonstick cooking spray

Preheat the broiler.

In a small bowl, mix together the brown sugar, chili powder, orange rind, cumin, paprika, salt, coriander and black pepper.

Rub the spice mixture over both sides of the salmon fillets.

Coat a broiler pan with the nonstick spray and place the salmon on the pan.

Broil for 8 minutes or until the salmon flakes easily when tested with a fork.

Remove from the broiler and serve.
