blucrop's Brine Recipe

this recipe is simple and tasty. ingredients:
salmon/trout/fish fillets
1 cup brown sugar
2 tablespoons kosher/ canning salt ( the original recipie calls for 1 cup...too salty and too high in sodium for me)
1/2 gallon (64 ounces) apple or cherry juice
mix ingredients in tupperward type container SAVING about 1 cup of juice to baste fish while smoking.
add the fish and agitate
refrigerate 12 or more hours.
agitate container when getting another beer or milk in the morning
smoke in your normal manner, basting with the saved apple juice...i add a little brown sugar to it...this will give a nice glaze with a slight sweet taste to the smoked fish.
i use different blends of wood to effect the flavor
